Ingredients:
2 pork loin pork chops (about 1/2 pound each)
1/8 teaspoon each of pepper, garlic powder, onion powder, paprika
1/8 teaspoon salt (added after cooking)
Instructions:
- Starting warming sous vide bath to 140
- Mix pepper, garlic powder, onion powder, & paprika together
- Dry two pork chops w/ paper towels
- Sprinkle one side of each pork chop with 1/4 of spices, rub into meat
- Flip, and rub spices into other side
- Seal pork chops in ziplocks - use straw or water displacement to remove air
- Place pork chops in water bath - wait for temp to reach 140
- Set time for 1 hr after hit 140
- After pork has cooked, sprinkle lightly with salt on each side. Sear 30 seconds per side on hot pan w/ canola oil.
- Tent under foil, serve after resting for 5 minutes.
Carole's Notes:
We split one pork chop for dinner. Worked well with green beans and pineapple.They turned out great! They seemed evenly colored through out. I believe they ended up being about "medium" - and very tender.
We are still working on process of getting the water bath up to temp. I think the key is getting the crock pot vessel warm to start - next time we may start with hot water (from microwave) - and let the crock pot sides warm up.
