Ingredients:
- 1/4 cup water
- 3/4 cup pizza or spaghetti sauce
- 1/2 cup crumbled feta cheese
- 1/2 cup Shredded mozzarella cheese, + 1/4 cup or so more for sprinkling
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon dry basil
- 1/2 teaspoon dry oregano
- 1/4 teaspoon garlic powder
- 2 eggs
- 3/4 cup flour
- ~ 24 pepperoni slices
Instructions:
- Preheat oven to 400, spritz wells of two 12 count mini donut pans with cooking spray
- Place pepperoni slices between two paper towels on a plate, microwave for 30 - 45 seconds to crisp and remove some fat
- Make small stacks pepperoni slices, dice into 1/8 or smaller wedges
- In a large bowl mix water, sauce, eggs, & spices
- Stir in flour and pepperoni dices
- Spoon about tablespoon batter in each donut well (you will need to make two batches if you 12 count pans)
- Bake for about 12 - 15 minutes until they look done (or they spring back when toughed lightly)
- Let cool a minute or so in pan, than remove from pan to cooling rack
- While still hot, sprinkle lightly with reserved mozzarella, filling in hole, and a bit on top (will melt in some)
