Cilantro green chili gougeres.
Ingredients:
- 6 tablespoons (3/4 stick) butter
- 3/4 cup water
- 1/2 cup chopped green chiles
(I used the 7 ounce can of whole chilis, and chopped them. They should measure 1/2 cup after chopping) - 1/2 teaspoon salt
- 1 cup all-purpose flour
- 1 tablespoon diced cilantro
- 4 eggs
- 1 1/2 cups sharp cheddar cheese
Instructions:
- Pre-heat the oven to 425 F.
- Combine the butter, water, green chilies and salt in a medium saucepan. Bring to a boil over medium high heat.
- Reduce the heat to medium low and stir in the flour vigorously with a wooden spoon until it looks like thick paste. Continue to stir and cook 2 minutes.
- Place the flour mixture in the mixing bowl of a stand mixer and let it cool for about 5 minutes.
- Add the eggs one at a time and mix in until well incorporated. You will have a thick shiny paste.
- Fold in the cheese & cilantro.
- Using small cookie scoop, drop the dough onto an ungreased baking sheet.
- Put the baking sheet in the oven and immediately turn the oven down to 375F.
- Bake 25 to 30 minutes or until golden brown.
- Serve immediately or at room temperature.
