Ingredients:
Garlic cream sauce
1 tablespoon minced garlic
1 tbsp unsalted butter
1 tbsp olive oil
2 Tbsp flour
3/4 cup of milk
1/3 cup of Parmesan cheese, grated
Generous pinch of salt
Generous pinch of black pepper
Very small pinch of red chili flakes
Biscuit Wrapper
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/3 cup butter
3/4 cup milk
Filling
2 cups chopped, cooked chicken meat
2 cups fresh chopped broccoli (steamed lightly)
1/2 cup chopped onion, lightly sautéed
1/2 cup chopped bell pepper, lightly sautéed (any color, I used red)
1 1/2 cups shredded mozzarella cheese
1 teaspoon dried oregano
1 teaspoon dried basil
1 tablespoon butter, melted
1 tablespoon parmesan cheese
Instructions:
- Preheat oven to 400 degrees F
- Cover large cookie sheet with a sheet of parchment paper
Garlic cream sauce
- Melt the butter, along with the olive oil on medium to low heat.
- Add minced garlic, cook for 1 minute,
- Add flour and stir for a minute.
- Add in the milk and give a good stir.
- Keep stirring until it just starts to simmer.
- Add in the salt, pepper, and chili flakes, along with the cheese, and continue stirring.
- The sauce will thicken pretty quick, so continue to stir.
- Once the sauce is thickened, remove from the burner, and set aside.
Biscuit Wrapping
- In a food processor, whir together the flour, baking powder, salt, and sugar. Cut in the butter until the mixture resembles coarse meal.
- Gradually stir in milk until dough pulls away from the side of the bowl. (You may not use all the milk.)
- Dump dough onto a floured surface, and fold over about 10 times.
- Roll out about 1/4” thick. Cut into triangles (to mimic biscuits from a can)
Chicken Broccoli Filling
- Mix together the chicken, broccoli, onions, bell pepper, cheese, garlic cream sauce and spices.
- Place a large glass upside down in the center of the cookie sheet.
- Spread out biscuit triangled around the base of the glass, with pointy ends away from the glass (will look like a sun flower)
- Spoon he chicken mixture onto the thick part of each biscuit piece.
- Fold the pointy end of each biscuit piece over the top of the chicken mixture and tuck in towards the center.
- Brush melted butter over roll. Sprinkle with parmesan cheese.
- Remove glass from cookie sheet.
- Bake in preheated oven for 25 to 30 minutes, or until roll is golden brown
