I saw a recipe for a low carb Blueberry Protein Breakfast Bake, and tried it today since I had all teh ingredients.
Ingredients:
- 1 cup cottage cheese
- 2 large eggs
- ¼ cup Greek yogurt
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons powdered milk
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- ½ cup almond flour
- 1/4 cup vanilla protein powder - optional
- 1/2 cup sliced almonds
- 1 cup fresh or frozen blueberries (no need to thaw if using frozen)
Instructions:
- Preheat oven to 350
- Grease a small baking dish (I used a small Pyrex that was about 5.5" x 7")
- Mix cottage cheese, eggs, yoguty, maple syrup, amd vanila in a medium bowl. Whirr with immersion blender to remove lumps.
- Stir om powdered milk. cinnamon, salt, almon flour, protein powder, and most of sliced almonds
- Fold in most of blueberries
- Transfer mix into the baking dish
- Sprinkle reserved sliced almonds and berries on top
- Bake for 35 ot so minutes until the dish seems firmed up

We liked this! It is lfluffy, ightly sweet, and a different way to eat cottage cheese.This seemed to make about 3 servings.
