Blueberry Protein Breakfast Bake

I saw a recipe for a  low carb Blueberry Protein Breakfast Bake, and tried it today since I had all teh ingredients.

  

Ingredients:

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup Greek yogurt
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered milk
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • ½ cup almond flour
  • 1/4 cup vanilla protein powder - optional
  • 1/2 cup sliced almonds 
  • 1 cup fresh or frozen blueberries (no need to thaw if using frozen)

Instructions:

  1. Preheat oven to 350
  2. Grease a small baking dish (I used a small Pyrex that was about 5.5" x 7")
  3. Mix cottage cheese, eggs, yoguty, maple syrup, amd vanila in a medium bowl. Whirr with immersion blender to remove lumps.
  4. Stir om powdered milk. cinnamon, salt, almon flour, protein powder, and most of sliced almonds
  5. Fold in most of blueberries
  6. Transfer mix into the baking dish
  7. Sprinkle reserved sliced almonds and berries on top
  8. Bake for 35 ot so minutes until the dish seems firmed up

Carole's Notes:

We liked this! It is lfluffy, ightly sweet, and a different way to eat cottage cheese. 
This seemed to make about 3 servings.
