Broccoli Mint Salad

I wanted to use mint and broccoli, and found this recipe to try.


  

Ingredients:

  • 1 tablespoon apple cider vinegar
  • juice of 1/2 a lime
  • 2 tablespoons olive oil 
  • 1/4 teaspoon each garlic powder, salt, and black pepper
  • 1/4 cup mint leaves. roughly chopped
  • 1 celery stalk, sliced into thin rounds
  • 8 ounces broccoli (I thawed some frozen, and cut it into small chunks)
  • 1/4 sliced almonds
  • 1/4 cup grated mozzarella cheese
  

Instructions:

  1. In a small bowl, mix the vinegar, lime juice, and olive oil together with the garlic powder, salt, and black pepper,
  2. Mix the mint leaves
  3. Stir in the broccoli and celery, coating everything
  4.  Stir in the almonds and cheese
  5. Let sit for a few minutes or more in the refrigerator

We liked this! It was a  different way to eat broccoli.
