I wanted to use mint and broccoli, and found this recipe to try.
Ingredients:
- 1 tablespoon apple cider vinegar
- juice of 1/2 a lime
- 2 tablespoons olive oil
- 1/4 teaspoon each garlic powder, salt, and black pepper
- 1/4 cup mint leaves. roughly chopped
- 1 celery stalk, sliced into thin rounds
- 8 ounces broccoli (I thawed some frozen, and cut it into small chunks)
- 1/4 sliced almonds
- 1/4 cup grated mozzarella cheese
Instructions:
- In a small bowl, mix the vinegar, lime juice, and olive oil together with the garlic powder, salt, and black pepper,
- Mix the mint leaves
- Stir in the broccoli and celery, coating everything
- Stir in the almonds and cheese
- Let sit for a few minutes or more in the refrigerator
