Chocolate Chop Chip Bundt Cake (Nothing Bundt copycat)

My friend Carissa wanted a Nothing Bundt Chocolate Chop Chip Bundt Cake - I found a copycat recipe to make for her.



Ingredients:

Cake:
  • 1 package devils food cake mix
  • 3.9 ounce box instant chocolate pudding
  • 1 cup sour cream or Greek yogurt
  • 4 large eggs, room temoerature
  • 1/2 cup water
  • 1/2 cup oil ( canola oil)
  • 1 1/2 cups chocolate chips (I used 1/2 cup mini, and 1 cup regular chips)
Optional Pudding Mix Substitute:
  • 47 gr nonfat dry milk powder 
  • 32 gr sugar
  • 16 gr cornstarch 
  • 16 gr baking cocoa
  • pinch of salt
Cream Cheese Frosting:
  • 8 ounces cream cheese , softened
  • 1/4 cup butter , softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350 degrees F, and grease and flour the bundt cake pan w/ Baker's Joy, or the mini bounty pans.
  2. Mix all cake ingredients except chips. together. 
  3. Stir in the chocolate chips. 
  4. Scoop batter into your greased bunt cake pan. Bake at 350 for 45-50 min. Allow to cool in the pan for 10 minutes before inverting the cake onto a wire cooling rack.
    Note - For mini bunt pan, use 1 large cookie scoop and bake 15 to 19 minutes.
    For smaller stand alone rings, use 1 small cookie scoop and bake 12 to 15 minutes.
  5. Let cake cook 10 minutes before inverting onto a cooling rack.
  6. Wait for cake to completely cooled to frost.
  7. Mix up frosting: Combine the butter and cream cheese in a large bowl, using a stand mixer beat until creamy and lump-free.
  8. Beat in vanilla extract and salt 
  9. With mixer on low, gradually add powdered sugar until completely combined, scraping sides and bottom of bowl.
  10. Add cocoa powder and beat until completely combined, scraping sides and bottom of bowl.
  11. Frost completely cooled cake or cupcakes - it may help to cool frosting in the refrigerator before piping.

We all liked this!

I mixed up another half batch of batter, and made some mini bundts so Doug and I could try them. I made chocolate cream cheese frosting for them.
