I was feeling like an apple focaccia, and I have a lot of raisins as well. I made apple raisin foccacia rolls/
Ingredients:
- 8 1/2 ounces sourdough starter, fed or unfed
- 3/4 cup lukewarm water
- 2 teaspoons instant yeast
- 12.75 ounces All-Purpose Flour
- 1 1/2 teaspoons salt
- ⅓ cup (66 grams) sugar
- 1 teaspoon cinnamon
- 2 tablespoons nonfat dry milk
- 3 tablespoons olive oil
- 3 small apples peeled, cored and shredded.
- 1/2 cup granulated sugar
- 1 teaspoon cinnamon (for the apples!)
- 1 cup raisins, perhaps chopped a bit
- 3 or 4 tablespoons course sugar for topping
Instructions:
- Combine the starter and water in stand mixer bowl. Mix in yeast, and 1 cup of flour. Let proof for 5 to 10 minutes.
- Mix in rest of flour, salt, 1/3 cup sugar sugar, cinnamon, powdered milk, and oil, and knead them in the stand mixer for 5 minutes to make a smooth, soft dough.
- Add in the applies and raisins and knead for another 2 minutes.
- Place the dough in a lightly greased bowl, and let it rise for 1 hour or until doubled in bulk.
(This time, I just scooped the dough and let it rise in the pans.) - Using cooking spray, lightly grease 24 cup cake wells. (
- Scoop the dough into each of the wells, and press down to fill wells.
- Let the dough rise for 30 minutes or so, covered. It should get puffy.
(Let it rise for 60 minutes if you skip the first rise.) - Preheat the oven to 400 degrees for the last 15 minutes of proofing time.
- Bake the mini muffin sized rolls for 15 to 17 minutes. Bake the cupcake size rolls for 20 to 22 minutes. The edges should be golden brown.
- During the last few minutes of baking time, prepare the glaze by adding 1/2 cup brown sugae to 1 cup of wate. Stir well to combine then microwave on high power for 1 minute to dissolve the sugar.
- When the focaccias are removed from the oven, immediate brush them with the glaze mixture.
- Remove pan from oven, let cool for 10 minutes or so.

We liked this! It really made a lot - 12 cupcake size rolls, and about 40 mini muffin size rolls.
