Hot Chocolate Cookies

Doug asked me if I could make a soft chocolate cookie. I made these!


 

Ingredients:

  • 1.5 cups all-purpose flour (180g)
  • .5 cup hot cocoa mix (about 3 to 4 packets)
  • .25 teaspoon salt
  • .75 teaspoon baking powder
  • .5 teaspoon baking soda
  • .5 cup unsalted butter, softened
  • .5 cup light brown sugar (110g)
  • .5 cup granulated sugar (100g)
  • 1 large egg (room temperature)
  • 2 teaspoons vanilla extract
  • 2/3 cup semi-sweet chocolate chips
 

Instructions:

  1. Preheat the oven to 375F. Line three half sheet pans with parchment paper or a silpat mats,
  2. In a medium bowl, whisk together the flour, cocoa mix, salt, baking powder, and baking soda.
  3. In the bowl of a stand mixer beat the butter and sugars together on medium speed until light and fluffy with the paddle attachment,about 3 minutes. 
  4. Add the egg and vanilla and beat until well combined, stopping to scrape down the bowl. Add the flour mixture and mix on low speed just until combined. Mix in the chocolate chips.
  5. Optional - cool in the refrigerator for 20 - 30 minutes. (May be needed if you live in Florida - my first batch turned out pretty thin.)
  6. Scoop the dough into balls using a small cookie scoop (about 1.5  tablespoons) and place 12 on the baking sheets 2 inches apart.
  7. Bake 1 sheet at a time for 10 to 11 minutes. 
  8. Cool for a few minutes on the baking sheet and then transfer to a wire rack to cool completely.
 

Carole's Notes:

Mom, Glenn, and I liked these! I thought they were a little flat, so I plan to chill them for 20 to 30 minutes next time. (Maybe my baking soda was old?)
