We were thinking about what to have for lunch and dinner, and picked up some pastrami and other fixing to make Reuben sandwiches. I got a large jar of sauerkraut, planning to make pork chops with sauerkraut for dinner. I still have a lot of caraway seeds left, so I was happy to find thus recipe.
Ingredients:
- 1 large Sweet Onion peeled & sliced into thin strips
- 1 cup diced carrots (or baby carrots, cut into slices)
- optional - 1 stalk celery, thinly sliced into "Cs"
- 1 clove garlic minced (or 1/2 teaspoon garlic powder)
- 4 slices bacon diced
- 16 ounces sauerkraut, drained & rinsed
- 2 medium or 3 small apples, peeled and cut into 1" chunks
- 1 large potato, peeled and cut into 1" chunks
- 4 pork chops, 3/4" to 1" thick
- 1/4 teaspoon black pepper
- 14.5 oz can chicken broth (or 12 ounces German beer)
- 1/4 cup lentils
- 1 tablespoon caraway seeds
Instructions:
- Sauté onion, (celery if using,) and carrots until onions are opaque 3 - 5 minutes.
- Add garlic and cook another minute. Add chicken broth and de-glaze the pot.
- Add potatoes and apples to pot, stir in,
- Sprinkle with caraway seeds, stir in.
- Lay pork chops on top of veggies.
- Leyer sauerkraut on top of the pork chops.
- Cook on High Pressure for 13 minutes. Naturally release pressure for 4 minutes, then Quick release.
