Ingredients:
- 3 eggs, lightly beaten
- 2 tablespoons vegetable oil
- 1 cup cottage cheese
- 1/3 cup all-purpose flour
- optional - zest from 1/2 a lemon
Instructions:
- Whisk eggs in a medium bowl.
- Whisk in oil.
- Mix in cottage cheese.
(Use an immersion blender or mix in a food processor if you want a smoother batter.) - Mix in flour (and lemon zest if using.)
- Heat a large skillet over medium heat, and coat with cooking spray/oil/butter.
- Scoop 1/3 cup of batter per pancake.
- Cook for 3 minutes or so until some bubbles appear on top, flip pancakes, and cook for another minute or so.
Carole's Notes:
We liked these, especially with diced strawberries on top and a bit of maple syrup. They are light enough, a bit chewy, and not too thick. (I usually like thin pancakes, but these were fine.) Some variations mix diced fruit into the pancakes.The recipe makes about 8 pancakes - probably enough for 2 people.
