Here's the healthy-ish ranch dip I sometimes make.
The recipe is adapted from http://www.foodnetwork.com/recipes/ellie-krieger/ranch-dressing-recipe.html
Ingredients:
- 7 ounces nonfat Greek yogurt or low-fat cottage cheese (I've been using cottage cheese mostly)
- 1 ounce mayonnaise
- 1.5 teaspoons dried parsley
- 1/2 teaspoon garlic powder
- 1/16 teaspoon dried dillweed (use 1/8 or 1/4 teaspoon if not serving to Doug)
- 1/2 teaspoon onion powder (option - add 1 to 2 tablespoons minced chives as well)
- 1/2 tsp Kosher salt
- 1/2 tsp black pepper
- 2 tablespoons dried onion flakes
- 1 or 2 tablespoons milk as needed to thin
- (optional - 2 teaspoons Dijon mustard - I don't add this very often)
Instructions:
- If using coittage cheese, whirr in food processor for a minute or so to turn smooth.
- Add in mayo and herbs, whirr some more.
- Add in dried onion flakes, either stir or whirr them in.
- Add 1 to 2 tablespoons milk, as needed. (The onion flakes will soak up some of the moisture.)
- Allow sit in refrigerator for 2 hrs to re-hydrate herbs and mix flavors.
