Pineapple Casserole Bites
Pineapple casserole bites for the potluck tomorrow.
Ingredients:
- 3 (20 ounce) cans pineapple chunks
- 2 cups shredded Cheddar cheese (8 ounces)
- 8 tablespoons all-purpose flour
- 1/2 cup brown sugar
- 1.5 cups buttery round, crushed (Townhouse or Ritz)
- 1/3 cup butter, melted
- 2 slices fluffy wheat bread (ends ok!), crumbed w/ food processor
- 16 ounce pack egg roll wrappers (cut into 1/4 squares, or 12 ounce pack wonton wrappers)
Instructions:
- Let wrappers warm to room temperature (so they are easier to place in muffin tins)
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine pineapple chunks, cheese, flour, bread crumbs, and sugar.
- Place egg roll wrapper (or wonton wrapper) in all slots of two mini greased (with PAM) muffin tins
- Spoon pineapple mix into wonton wrapper cup. (I used the large cookie scoop)
- Crush crackers, mix in melted butter.
- Sprinkle each cup with the crushed & buttered crackers.
- Bake in preheated oven for 15 minutes.
- Remove from muffin pan, let cool on wire racks.
